Quinoa Arugula Salad with Lemon Thyme Dressing

Ingredients
FOR THE DRESSING

lemon
juiced

tbsp.
olive oil
2
tbsp.
red wine vinegar
1
clove
garlic
diced
1
tsp.
fresh thyme
finely diced
salt and pepper
to taste
FOR THE SALAD
3
cups
arugula
1.5
cups
leftover cooked quinoa
¼
cup
sliced almonds
Instructions
Prepare the dressing by combing the ingredients in a small bowl and whisking together. Set aside until ready to use.
Prepare the salad by combining the arugula, quinoa and almonds in a large bowl. Add dressing and toss to combine.
Serve and enjoy!
