Chipotle Lentil Avocado Toast

This Chipotle Lentil Avocado Toast is the ultimate vegan brunch meal - sourdough bread topped with avocado, greens and warm chipotle lentils.

Ingredients

  • 1 tbsp olive oil
  • 1 shallot diced
  • 1 clove garlic diced
  • 1 chipotle pepper in adobo sauce
  • 1-2 tbsp adobo sauce from the can
  • 1 cup cooked lentils
  • 2 avocados
  • 1/2 tsp garlic powder
  • salt & pepper
  • 4 slices sourdough bread or bread of choice
  • 2 cups arugula or greens of choice
  • cilantro, hot sauce, chili oil optional toppings

Instructions

  1. Heat olive oil in a pan over medium heat.

  2. Add shallot, garlic, chipotle pepper and adobo sauce to the pan and sauté for 3 minutes. 

  3. Add lentils to the pan and stir to combine. Taste and add salt & pepper to taste. Turn heat to low until ready to eat.

  4. Add avocados, garlic powder and a pinch of salt & pepper to a bowl. Mash avocado with a fork and set aside.

  5. Toast bread. 

  6. To assemble, spread equal amounts of avocado on each slice of bread. Top with a handful of arugula and a 1/4 cup of lentils. 

  7. Add optional toppings of choice and serve!
