These vegan Avocado Black Bean Quesadillas are a healthy take on a classic take-out item. Serve with fresh salsa and cilantro.
1/3cupblack beansdrained and rinsed
Heat a pan over medium heat.
Using a knife, spread avocado evenly on one tortilla. Top with black beans, bell pepper, cumin and cayenne. Top with remaining tortilla.
Spray pan with nonstick spray. Place quesadilla in the pan and cook until browned on bottom side. Using a spatula, carefully flip quesadilla and brown the other side.* Remove from the pan and slice into 4 pieces. Top with cilantro and serve
*If anything falls out while you're flipping, just stuff it back in after you flip it.
