Grilled Veggie Platter

  • 2 lbs. veggies*
  • 1/4 cup olive oil
  • 1 tsp. garlic powder
  • 1/4 tsp. black pepper
  • salt to taste
  • FOR DIPPING: hummus


  1. Heat a grill to medium-low heat.
  2. Prepare veggies by deseeding, removing steams and cutting in half.
  3. Prepare marinade by combining olive oil, garlic powder, pepper and salt in a large bowl. Add veggies and toss to combine.
  4. Add veggies to the grill and cook for 10-20 minutes, flipping halfway through.
  5. As veggies get grill marks and are cooked through, remove from the grill.
  6. Slice large pieces into bite sized pieces and serve with hummus.

*I used 2 small zucchinis, 1 yellow squash, 2 poblano peppers, 1 large red bell pepper, 2 yellow hot peppers, 3 jalapenos.
