This Vegan Tater Tot Breakfast Casserole is loaded with vegan eggs, vegan sausage, tempeh bacon and veggies. The perfect vegan brunch or meal prep breakfast.
Cook up the filling
The filling is a combo of vegan sausage, tempeh bacon and veggies. Cook everything until crispy then add to a baking dish!
Pour the vegan eggs over the filling and top with frozen tater tots!
Bake at 375 for 35-45 minutes.
Top with parsley, slice it up and serve!
