Prep the veggies. Peel tomatillos, rinse & cut in half. Dice onion and peel garlic.
Roast the veggies. Drizzle with olive oil and roast at 450 for 15 minutes.
Blend. Add roasted veggies to a food processor with cilantro, lime juice, jalapeno, salt & pepper.
Serve. Serve with tacos, burritos, bowls, salads or chips.
